Macaroni alla Norma

The Macaroni alla Normais a typical Sicilian first course and is a specialty of Catania, a tribute toBellini's standard. This dish brings Mediterranean Flavors and Aromas to the table thanks to the sauce of tomatoes, fried aubergines and grated salted ricotta, added at the end of cooking together with a fresh basil leaf. A simple dish, but with an irresistible flavour, genuinely prepared by all Sicilian mothers and grandmothers.
